[MIDNIGHT DINER #WOKHEY] - Korean Army Stew

[Pork Rib Marinade]

250g Pork Spare Ribs

1 tablespoon Gochujang

1 tablespoon Sesame Oil

Dash of Salt + Pepper

[Stew]

40g Butter

1 Leek

2 cloves Garlic (minced)

8 Cherry Tomatoes (halved)

1 Beefsteak Tomato (sliced)

1 Portobello Mushroom (sliced)

200ml Water

50g Kimchi

2 Tablespoons Gochujang

100g Enoki Mushrooms

200g Chinese Spinach

100g Picnic Ham

100g Breakfast Ham

3 Eggs

  1. Marinade pork ribs for at least 1 hour.

  2. Sauté white ends of leeks in 30g butter with a dash of salt

  3. Add in minced Garlic. Sauté

  4. Add in tomatoes. Sauté

  5. Add in 10g butter. Sauté

  6. Add in Portobello slices. Sauté

  7. Add in ribs. Sear on high heat.

  8. Add 200ml water into the pan/pot.

  9. Add in 50g kimchi.

  10. Simmer. (+ taste!)

  11. Add in 2 tablespoons of Gochujang

  12. Simmer. (+ taste) + add more kimchi if you want

  13. Add 100ml water. Simmer

  14. Add in Enoki mushrooms, Chinese Spinach & Hams. Simmer

  15. Pour in eggs gently. Simmer

  16. Garnish with green ends of leek.

  17. Serve
